Mediterranean Egg Salad Wrap

IMG_6160I love this recipe because it’s a great source of protein at close to 20 grams per wrap. Swapping in low-fat Greek yogurt for mayonnaise is a heart healthy choice without compromising flavor. This is the perfect recipe for little hands to help mash avocado, peel cooled eggs and stir a bowlful of healthy ingredients. This soft wrap is best balanced with something crunchy like chilled grapes or crisp spears of peppers, celery or carrots.

Ingredients

8 eggs, hard-boiled and peeledIMG_6156
2 avocados, skinned and pitted
4 Tbsp. low-fat Greek yogurt
½ tsp. fresh ground salt
¼ tsp. fresh ground pepper
¼ tsp. paprika
1 tsp. prepared mustard
1 tsp. fresh chopped chives per wrap

  1. Chop all ingredients by hand or in a mixer set to chop mode. Save chives for topping.
  2. Sprinkle with chives.
  3. Wrap up and down and side-to-side.
