Banana, Berry, Apple Bread


Make traditional banana bread more nutritious by tripling the fruit and swapping milk for Greek yogurt. My Dutch grandma taught me how to make banana bread when I was old enough to mash a banana and sugar together. It was my “special job” as she put it. The smell of it baking in the oven brings back warm memories of the many life lessons she me taught and recipes shared.

Ingredients

  • 2 bananas, mashed
  • 1 cup blueberries
  • 1 apple, skinned and diced
  • 1/2 cup butter, melted
  • 3/4 cup dark brown sugar
  • 1/3 cup plain, greek yogurt
  • 2 eggs
  • 2 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp cinnamon
  • 1 tsp. vanilla

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Mash bananas with brown sugar. Stir in melted butter.
  3. Add Greek yogurt and eggs and combine well.
  4. Mix in all of the dry ingredients.
  5. Gently fold in berries and diced apple.
  6. Cook for 1 hour. Enjoy.
