A super easy protein and fiber forward lunch option.

Many of my clients choose this easy, make ahead, protein and fiber forward lunch as a default option that helps them avoid a drive through or random convenience purchase. These turkey roll ups can be made with mozzarella slices or sticks depending on how gourmet you want to get or if you need to accommodate kid preferences.

Ingredients

  • Sliced turkey deli meat
  • Lettuce
  • Slivered sweet peppers
  • Mozzarella slices or sticks
  • Apple slices

Directions: Layer 2 slices of deli meat with romaine or arugula, followed by slivered sweet peppers and mozzarella. Roll closed, wrap in plastic, secure with a toothpick and refrigerate. Can be easily made ahead and can be safely stored for up to 72 hours. Serve with a side of crisp, apple slices.
